Cinnamon Toast Crunch Cake!

I have to say that this is one of the best cakes to make and eat! It’s a vanilla cinnamon cake with cinnamon cream cheese frosting filled cinnamon toast crunch cereal. If you have kids like my nephews, I’m sure this is something that they would absolutely love. It’s sweet, crunchy and chock full of cereal. I mean what’s not to love?!

Ingredients:

For vanilla cinnamon cake

  • 3 cups of AP flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3 tbsp of cinnamon* (see note)
  • 2 cups of dark brown sugar
  • 4 eggs
  • 1 cup of butter– room temperature
  • 1 tbsp vanilla
  • 1 1/2 cup of milk with 1 tbsp of cinnamon added
  • 4 cups of cinnamon toast crunch cereal crushed

For cinnamon cream cheese frosting:

  • 5- 8oz blocks of cream cheese– room temperature
  • 4 cups of powdered sugar
  • 1 tbsp vanilla
  • 2 tbsp cinnamon

Process:

  • Preheat oven to 350F
  • Grease three 9 inch baking pans with parchment circles
  • Sift flour, baking powder, salt, cinnamon and salt and set aside
  • Beat butter and sugar together until light and fluffy
  • Add eggs one at a time; beating well after each addition
  • Alternate adding flour and milk/cinnamon mixture; starting with flour and ending with flour
  • Add vanilla
  • Add even amount of cake batter between three pans
  • Bake for 25 to 30 mins
  • While baking cake, prepare cream cheese frosting

Cinnamon cream cheese frosting

  • Beat cream cheese in stand mixer until smooth
  • Slowly add powdered sugar until well combined
  • Add cinnamon and vanilla
  • Mix well

Assembly

  • After cake has cooled, place one layer on bottom of cake board and spread cream cheese frosting on top. Add crushed on top of cream cheese frosting.
  • Repeat steps with second layer
  • Add final layer and spread cream cheese frosting on top and sides of cake as crumb coat
  • Place cake in fridge for 10 minutes
  • Frost cake with remaining frosting
  • Add crushed cereal to side of cake and top of cake

Note- You can always add more ore less cinnamon in this step. I wanted a deep cinnamon flavor so I added more.
