Tacos Ain’t Just for Tuesday!

If no one else has told you, I’ll be the first tacos ain’t just for Tuesday! Why would anyone want to delegate only one day out of the week to enjoy something as delicious as tacos?!?!?!

Speaking of delicious, let’s talk about Birria tacos! If you’re like me you’re always on the hunt for recipes that are not only delicious but easy to tackle. I recently joined Tik Tok (I know I know, I’m late to the party) and found the easiest and most delicious Birria taco recipe from @saltycocina. 

The recipe was so easy to follow with not too many ingredients and packs such a punch of flavor. I will say this recipe is a labor of love but don’t worry, your pot does most the work.

Ingredients: For meat 

  • Chuck Roast-5LB*
  • 1/2 onion
  • 1 bulb or head of garlic
  • 1-2TBSP salt
  • 4 bay leaves

Sauce:

  • 6 garlic cloves
  • 6-8 peppercorns
  • 5 Whole Cloves 
  • 2 cups of water
  • 1 TSBP Oregano
  • 1/2 Tsp Thyme
  • 1/2 tsp Cumin
  • 2-3TBSP Beef Bouillon or better than bouillon
  • 6-8 Chiles de Arbol
  • 3 Ancho Peppers
  • 10-12 NM Chili Pods or Guajillo (dried)
  • 1 TBSP of Vegetable Oil

Let’s make it:

  1. Cut the chuck roast into 1in pieces*
  2. Boil the meat in 8 cups of water with:
    1. 1/2 onion
    1. 1 head of garlic
    1. salt
    1. 4 bay leaves
  3. Boil for 1 hour on medium high heat and skim the fat off the top.
  4. When the meat has boiled for almost an hour, grab a skillet and add a skillet with vegetable oil.
  5. Lightly toast with chilies and garlic moving around constantly for 3-4 minutes. Be sure to keep the heat on medium to not burn the chilies or garlic.
  6. Add chili, garlic, whole cloves to a blender with peppercorns and 2 cups of water.
  7. Fish out the onion and garlic from the meat pot and add the onions and garlic from the meat and blend until smooth.
  8. Once smooth, strain over the meat until its all in the meat po.t
  9. You can add water to the strainer to make it easier to push the sauce through
  10. Add Thyme, Oregano, Cumin, Beef Bouillon,
  11. Cover and simmer on low heat for 2 hours or until meat is tender
  12. Dip soft tacos in sauce
  13. Lightly fry in skillet add meat and cheese.
  14. Once slightly browned remove from pan, add to a plate with cilantro and onions. Be sure to customize these tacos anyway you like. Add your favorite salsa, jalapeños, lime, tequila! The options are endless.
