My favorite food is pizza and honestly I could it everyday without even trying. I love everything about pizza: the cheese, the toppings, the sauce, the crust, ABSOLUTELY EVERYTHING.
Here’s the thing though, as much as I want to eat pizza everyday I can’t because adulting sucks. See, I’m transitioning to a more plant based diet so I’m trying to make healthier choices but I am not willing to give up everything I love.
For me that means tweaking the foods that I love and in this case it’s pizza. For tonight’s dinner I made vegan pizza topped with green peppers, onions, mushrooms, spinach, tomato and chili and pepper crunch from Trader’s Joes.

Ingredients:
- 1/2 green pepper
- 4 button mushrooms with stems removed
- 1/2 white onion
- Handful of spinach
- 1 tomato on the vine
- 1 vegan pizza dough
- 1 cup of vegan cheese (I prefer the So Delicious Shreds)
- 1/4 cup pizza sauce
- 2 tablespoons of chili and onion crunch (Trader Joes)
- 2 tablespoons olive oil
- 2 tablespoons of all purpose seasoning
- Salt and Pepper to taste
- Flour for dusting and rolling out pizza
Tools:
- Rolling pin
- Pizza stone
- Pizza cutter
Method:
- Preheat oven to 375 F
- Sprinkle flour on clean flat surface
- Roll out pizza to large circle
- Place pizza on stone and set aside
- Slice green pepper, onion, mushrooms and tomato into thin slices
- Add veggies and spinach in a bowl, season with all purpose seasoning, salt and pepper and add oil
- Toss to combine and set aside
- Spread pizza sauce on crust
- Add chili and onion crunch on pizza sauce
- Spread cheese all over crust
- Place toppings on top of cheese and be sure to spread evenly across the pizza
- Place pizza in the oven for 25-35 minutes
- Allow pizza to cool for 5 minutes
- Slice pizza with pizza cutter
- ENJOY!!!
